Buttermilk Pancakes

Buttermilk Pancakes Recipe

It's become a tradition in our make homemade Buttermilk Pancakes EVERY Sunday for breakfast. The boys seem to absolutely LOVE this new tradition and they gobble these down each week. Lucky for you I am sharing this super yummy recipe {given to me by my cute friend Molly!} Trust'll never look at a box of Bisquick the same. Making these homemade pancakes is SO worth it!

Buttermilk Pancakes

2 cups flour
1 1/4 tsp. baking soda
3/4 tsp. baking powder
1 tsp. salt
2 eggs, unbeaten
2 cups buttermilk
1/4 cup butter melted

Mix dry ingredients together. Add remaining ingredients and stir until mixed. Then, cook on buttered griddle.

If you're feeling REALLY ambitious...try this mouth watering Buttermilk Syrup. I could devour it by the spoonful.

1 cup buttermilk
1 cup sugar
1/4 cup butter

Boil 1 minute and add:

1/2 tsp. vanilla
1/2 tsp. baking soda

It will fizz up when you add the baking soda. Serve over pancakes.

Quick tip: Two weeks ago...I realized that I had left my buttermilk in the trunk of my car overnight. It had rolled out of the bag and I somehow missed it when I was bringing my groceries in. My kids were BEGGING me for these pancakes but I knew they wouldn't taste right without the buttermilk. I googled my problem and came up with a 'make your own buttermilk' solution. If you are in a pinch - this DOES work. Your pancakes will not be AS thick and fluffy...but taste does the trick!

Place 1 TBS. vinegar in 1 cup of milk. Let set for 5 minutes.
That's it!

So for THIS recipe...I do 2 TBS. vinegar mixed with 2 cups of milk.
