Car Tunes n' Page Turners.

I'm giddy with excitement.
We are getting ready to celebrate the 4th of July in MUCH cooler temps.
This get away always comes at just the right time of our HOT HOT summer.

We've made it a little Coombs 'tra-dish' to make a new cd anytime we go on a ROAD TRIP.

Girls Camp Awards.

Tonight at mutual we handed out Girls Camp Awards...
Our version of 'Camp Superlatives'.

I knew I wanted some type of award BASED around candy.
Because...really.  Who doesn't LOVE getting candy?

Awards Included:

The SWEET-TART award - sweetest kindest girl at camp

The SYMPHONY award - the girl who came up with the BEST songs and cheers for our ward at devotional time.

The DOVE award - most peaceful and never complained

The MENTOS award - the best MENTOR and example to our younger girls

The MR. GOODBAR award - to the girl who made the most friends {this was one of our 4th year girls and she was so afraid she wouldn't have any friends this year in her group!}

The STARBURST award - for the girl who was the breakout STAR during our 1st year initiation dance.

The LIFESAVERS award - willing to save others and help out with their chores

The EXTRA mile award - always helped out when help was needed

The MOUNDS award - the girl who grew 'heaps and mounds' the most that week

The REESES PIECES award - because we would've fallen to PIECES without this girl's sweet testimony

This Weekend:

* The boys had a lemonade stand.

It was quite possibly the hottest afternoon YET this summer.
But they were determined.
And $21 happy!

London drank just as much lemonade as they sold.
Luckily...she was discreet.

* Joe and I went out Friday night.
Dinner HERE.....Friday night is their POT ROAST special night.
It is Ah-Mazing. good as my moms.

We saw THIS movie.
It say the least.
Joe's a BIG fan of the director Wes Anderson.
Hence....the pick.
Not sure I would recommend it.  Kinda slow.  And kinda weird.

* Saturday morning the kids had money burning holes in their pockets {from their lemonade earnings of course!} so we headed to the mall.

Sunglasses for $1.99?  BARGAIN!!  

* Grocery shopped.  Probably spent $20 more than usual by shopping at a grocery store that had a play place for the kids, but man...was it worth it.  Now...all THREE of my kids go in and lets just changes my whole grocery shopping experience.  I always tell the lady in charge that I'm gonna drop them off one day, get a pedicure and come back in like 3 hours.  She thinks I'm kidding.

* Date night #2 {yes...we deserve it...our kids are home 24-7 now from school!}.

Dinner HERE with fun friends.
It's definitely not my favorite restaurant BUT...Joe LOVES seafood so every now and again I throw one in for the team.  Not to mention....I'm pretty sure I could easily pound a dozen of those cheddar garlic biscuits.  YUM!

*Uplifting-ness at church.
Taught THIS lesson.

* 3 hour nap.
It's true.  Every Sunday I say I'm NOT gonna lay down's just so TEMPTING!

*Made THIS for Sunday dinner.
And yes....I'm a huge fan of pot roast. I just can't seem to get enough.

*Enjoyed warm homemade chocolate chip cookies brought to us by one of my cute Beehives.
Warm chocolate chip cookies are my weakness.  


*Joe and I watched the new Jim Gaffigan special on Netflix. 
We laughed so hard our sides hurt.
And so many funny jokes about  having kids and being a parent.

Forgiveness Lesson Handout.

Pina Colada Cupcakes!

As is the recipe for these mouth watering cupcakes.


I got the recipe from my sister awhile back and I'm not quite sure which website it's from....but enjoy!

*Note: If you are going to frost your cupcakes with a large'll need to DOUBLE the frosting recipe.  Also, if you plan to use maraschino cherries on top...make sure to rinse and dry them first so that the cherry juice doesn't drip and run all over your frosting.

**Double Note: It's really bugging me that I don't know how to put the little squiggly line over the N in Pina on my computer.  Oh well.

Pineapple Cupcakes
(recipe by Glory Albin)

2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
3/4 cup sour cream
1 1/2 cups canned crushed pineapple (drained slightly)

1.  Mix flour, baking powder, baking soda and salt in a medium bowl and set aside.
2.  In a large bowl, using an electric mixer on medium speed, beat the eggs and sugar until slightly thickened and a light cream color (about 2 minutes).
3.  On low speed, mix in the oil and vanilla until blended.
4.  Add in the pineapple and sour cream and mix until fully incorporated.
5.  Add the flour mixture and blend until just combined and smooth.
6.  Line a cupcake pan with 12 paper liners and fill about 2/3 full.
7.  Bake cupcakes in a pre-heated 350*F oven for about 22 minutes.
8.  Remove from pan and cool on wire rack.
9.  Frost with Coconut Cream Cheese Frosting (recipe below)

Recipe yields 24-28 cupcakes.

Coconut Cream Cheese Frosting

½ cup (1 stick/8 Tablespoons) butter, at room temperature
8 oz. cream cheese, at room temperature
1/2 teaspoon vanilla extract (always use pure vanilla extract if possible)
1 1/2 teaspoons coconut extract (you may want to start with just 1 teaspoon of coconut extract, you can always add more, but you can't take it out!)
4 cups powdered confectioners sugar
1 Tablespoon heavy cream, heavy whipping cream or milk
1 Tablespoon Dark Rum

*Place butter in a large mixing bowl and blend until smooth. Add cream cheese and blend until well combined, about 30 seconds.
*Add vanilla extract, coconut extract and powdered sugar (1 cup at a time) and blend on low speed until combined. Increase to medium speed and beat until it begins to get fluffy.
*Slowly add the heavy cream or rum.
*Beat until fluffy, about 1 minute.
*Use at once or keep refrigerated. (This frosting will keep well in the refrigerator for several days, but you may need to re-beat it for the best texture.)

For added flavor and texture, top frosted cupcakes with toasted coconut.
(To toast coconut- lay about 1 1/2 cups sweetened flaked coconut on a baking sheet and bake at 375*F about 4-5 minutes).

Decorate cupcakes with fresh pineapple, maraschino cherries or paper umbrellas. 

Baby Shower 'FAVOR' idea.

I helped throw a BABY SHOWER the other night for my cute Mia Maid Advisor.

Bath & Body works is having their BIG sale right now and the shower gels only came to like a buck a piece.  I LOVE favors that only cost around a dollar!

I also LOVE favors that people can ACTUALLY use!

I've found that the easiest way to SPRUCE up water bottles..and I to just peel off the store wrapper and replace it with scrapbook paper that matches your theme. It adds a fun little touch!
