2fer Tuesday.

2 food products NOT to Try:

I usually blog about things I LOVE.
In an effort of 'keeping it real' however, I also find the need to inform my readers of the 'bleh' things I also try.

I feel like I'll save YOU time and money by this.

Super disappointed in this protein bar - mainly because at first bite - it was absolutely delish.  I LOVE peanut butter. But the after taste? No thank you! I really have YET to find a good protein bar that doesn't leave a nasty cauliflower like after taste.

Any suggestions?

The. Best. Green Salsa Recipe.

We had some fun friends over tonight for
Family Home Evening {aka Family Night} and I made one of our favorite mexican dishes + homemade green salsa.

This salsa is soooooo yummy!

Bonus: It takes about less than 5 minutes to make.

It's got a SWEET taste to it and you can decide how much 'kick' you give it by how much of the fresh jalapeño you add.{I'm a wimp when it comes to spicy stuff so I always use just half a jalapeño.}

It would be PERFECT to whip up for Cinco de Mayo. 

Green Salsa

28 ounce can of tomatillos {drain most of the juice}
1/4 cup sugar
1 bunch of cilantro {stems and all - just rinse off}
1/2 yellow onion - don't need to dice
1 jalapeno {I use half and only leave a few seeds in it in an effort to prevent too much spicey-ness.}

Just dump everything in your blender and blend!

Refrigerate before serving.  It sets up when refrigerated 
{gets kind of gel-like} so just stir before you serve.

This Weekend:

* Friday morning I went on a field trip with Carson's 3rd grade class.  We went to the movies...
{Popcorn + Diet Dr. Pepper = MY KIND OF field trip! I didn't even have to ride the bus! Double score!}

We saw this sweet movie {they're learning all about the Rainforest in their class right now} and we LOVED it.  Tina Fey does a GREAT job of narrating the whole thing.

Side Note: It kind of creeped me out just how human like these monkeys looked.  

Afterwards, we headed to the park for lunch and exploring.

I was AMAZED at how pretty it was there.
{This fun park is practically in my backyard and I've NEVER been before!}

Never in a million years did I used to think that AZ was 'pretty'. Having lived in Virginia and then Utah...AZ always seemed so BROWN and dry to me. 

But...I really have learned to LOVE this scenery.

And WHO KNEW we had PURPLE cactus around here?
I was fascinated!!!

* We spent the evening in Friday night and made homemade pizza with our kiddos.

Local peeps: Bashas has THE BEST fresh dough and sauce that you can buy - - right up by their bakery section. 

The rest of the evening was spent helping the boys practice for their talent show auditions this week.

Heaven help me.

I don't know who's more nervous.

Or them?
{Probably me.}

*Saturday morning we slept in and then headed over to the library.  My kids are on a reading kick right now and I couldn't love it MORE!

{Favorite series include: How to Train a Dragon, Percy Jackson, Dragonbreath and Stick Boy}.

* Saturday afternoon we had an early bday bash for Carson.
He invited a few friends to the movies with us to see...

They laughed their heads off { did Joe and I} and it was a FUN and EASY birthday party.

* Churchey-church on Sunday.

*3 yes THREE! hour nap afterwards.

* Pot roast + mashed potatoes for dinner.
{It's been awhile!}

I saw this on Instagram tonight.
I couldn't agree more!

Fun Finds + Random.

Just a few FUN FINDS today...

I've helped out everyday up at the kiddos school this week.
And while I am SO grateful to be able to do this - - I sit on the couch now like a zombie - - staring at my loads of laundry that need to be done + the dishes in my sink. 

Oh well.
Time spent with your family is more important than how clean your house is, right?


I did make a couple of stops at the Dollar Tree this week.

I have such a weird ob-sesh with bottles and jars.
Aren't these cute?

I should probably stock up on these.
They'd be fun to give for Memorial Day or the 4th of July filled up with candy.

They had one assembled and displayed this week and I realized I loved it EVEN more. I really should buy this now and save it for Christmas. 


New fave song.

It's silly how excited I am to have introduced my kids to this song a few days ago.  It made me even MORE excited that they LOVED it.

Did you know there was such a thing as purple cacti?

It's totally true.
I saw it with my own two eyes today while on a field trip just down the road from our house.
{Now I wanna grow one of these in my backyard.}

This is how I feel about the 
Bruce Jenner 20/20 interview tonight.
{P.S. What I wouldn't give to be able to make this face for my friends.
 Is it not THE BEST?!}

I promised my friends though I'd wait til NEXT week {gasp!} to watch it with THEM.

I'll have to settle with a NEW 2 hour Dateline tonight.

And I'm ok with that.

Cinco de Mayo ideas.

Cinco de Mayo is approaching and our family LOVES a good reason to snarf down mexican food.
{Let's be honest....We don't really need a reason.  We eat it all the time. It's our fave.}

If you're hosting a party of your own that are some super cute ideas you could use:

LOVE the idea of a self-serve Burrito bowl bar.
How brilliant to just lay out all of the different toppings in bowls.  P.S. That yarn garland? Beautiful!

Homemade Fried Ice-Cream.
Yes! Please!

This recipe uses Cinnamon Toast Crunch chopped up as the topping.  I like it already.

My husband guzzles El Pato like there's no tomorrow.
He eats it on EVERYTHING.

I really should start saving the cans so I can make cute little centerpieces like this one.

Who knew a pinata could also serve as a chip tray?
Heck - - any ole sombrero could be used for this awesome idea.  Just add salsa!

Sangria's are a MUST on Cinco de Mayo.
Of course I'm talking about the NON-ALCOHOLIC kind.

This recipe is SUPER tasty and kid approved.
It makes a TON so if you're just having a few people over - you could probably half it.

Mother's Day Craft Idea.

In need of a QUICK and EASY little craft to whip up for Mother's Day?

I've got you covered.

This is actually a re-post idea I came up with 
a few years ago.

It's super easy + super cost efficient.
{2 things I LOVE!}

Find yourself a metal serving tray from your nearest

And wa-lah!
You've got yourself an instant magnet board!

I bought a package of silver magnets from Target to add to each tray.

And that is IT!  

These trays could also hold notes, recipes... 

the possibilities are endless!  

I should mention also, that I scored the silver easels to set 

them on ALSO at the Dollar store.

This Weekend:

* Friday morning I met up with 2 of my favorite friends for breakfast HERE.

When I first moved to Arizona 14 years ago - - I knew NO ONE except for my parents. I had ZERO friends.  These 2 girls + a couple of others I cherish, came up to me on my very first day at church {singles ward} and introduced themselves, took me under their wings and invited me to hang out with them.  

I will be forever grateful for them.
I've also vowed to ALWAYS go up to the newbies at church and say hi.  Cause I totally know how it feels.

* Eye appointment afterwards.
Why do I always feel like the eye Dr. is trying to trick me with the....'which one is clearer' game?! I swear it makes me nervous! Like I'm gonna say the wrong answer or something!

{Fun Fact: I have quite possibly the worst eye sight ever.}

* Friday night our school hosted a SPRING FLING and ART WALK complete with Food Trucks.

Local Peeps: Queso Good is where it's at!

I had the Chicken Fajita 'Dilla and it was DE-LISH!
We also tried the Hot Cookie Truck and OMG!!!

SUCH a fun night!

* Dateline at home afterwards.
I'm starting to think I may have a problem.
I'm honestly obsessed with this show.

* Saturday morning my mom came over and helped me make strawberry freezer jam.

I've never made it before {can you believe it?} and so I was a little nervous to try it out by myself.  

Happy to say that it was incredibly EASY 
and went incredibly FAST! 

I used THIS recipe.
I used 5 packages of strawberries and made the recipe twice.
I got 14 - 1/2 pint jars of jam out of it.  

I am SO excited to give it a try tomorrow morning with my Alpine Valley bread.

* Pedicures afterwards...

I'm not so sure this 6 year old realizes how lucky she is.

I'm pretty sure I never got my first pedi until I was at least a senior in highschool. And yes - they spoiled her with apple juice and fruit snacks while she was there so she pretty much thought she was the queen.

* Pinewod Derby on Saturday afternoon.

I introduce to you......


{I told Carson he should've named it the Weiner Wagon. He thought I was gross.}

These 2 were BEAMING the entire afternoon.
HUGE thanks to their Uncle William for helping them make such COOL cars.

It just so happens, that Joe is their CUBMASTER and the boys think it's pretty much the coolest thing ever.

Watching their faces = priceless.

4th and 6th {out of 15} overall and no tears were shed.
A success in my book!

* Date night afterwards.

We tried a new restaurant that recently opened up right by our house called Tony Sacco's and we LOVED it!

I'm usually not a fan of thin crust pizza but this stuff was YUMMY!  Plus their salad with eggs and garbanzo beans beforehand was amazing! 

Dessert afterwards.

Does anyone else find it shocking that Baskin Robbins now charges like $3.49 for a ONE scoop cone?!?
{Ok ok you caught me...I got the double scoop}.

I'm going to sound REALLY old when I say this but...
I can honestly remember when it was only $1.25.

Nonetheless it is HANDS DOWN my very favorite mint chocolate chip ice-cream on all of the planet.

* We attended a wedding reception afterwards for one of my cute past young women. {This REALLY makes me feel OLD!}

They had a waffle cake + an Oreo cake which I thought was genius! The groom is gluten-free and so this is what they came up with.  I thought it turned out SO cute!

* Churchey-church on Sunday.

* Naptime afterwards.

* AFV + Strawberry Shortcake for dessert.

Another weekend for the books!
......Feeling blessed and grateful, indeed.
