Breakfast Sausage Biscuits.

As promised - - here is my niece's yummy recipe that we whipped up last weekend for breakfast.

* * * * * * * * * * * * * * * * * * * * * * * * * 

Breakfast Sausage Biscuits

1 tube refrigerated biscuits {Pillsbury Grands are good!}
1 cup shredded cheese
1 {16 oz} breakfast ground sausage roll
6 eggs
3 Tbs. milk
Salt and pepper to taste

* Preheat oven to 375 degrees.
* Generously spray muffin tin with cooking spray.
* Cut biscuits in half and push into bottom of muffin tin.
* Cook ground sausage.
* Add the meat to the biscuits in the muffin tin.
* Sprinkle with shredded cheese.
* Whisk eggs with milk and add salt and pepper.
* Pour a little egg mix into each muffin tin. 
* Place muffin tin on a baking sheet. 
* Bake in oven for 20-25 minutes, until golden brown and biscuits are cooked through.

Teacher Treats {for conferences}.

Bribery is not beneath me.
Especially when it involves my kids' teachers.

Our parent/teacher conferences are this week and I just can't seem to show up at those things empty handed.

We are so very blessed with such wonderful influences in our childrens lives.

This Weekend:

* On Friday, London got to be her teacher's assistant for the day. 

This included: moving her desk right next to the teacher, wearing a special lanyard for all to see, reading the spelling words to the class for their test AND her favorite...her very own cup of Starbucks hot cocoa.  

Her teacher is amazing.
When she fell asleep that night she said 'I just don't want this day to end!'. Too sweet.

* Donuts with one of my favorite friends on Friday morning.
Shouldn't ALL weekends start out with donuts?!

* Friday night was BiNgO night at the kids' school.

We LOVE this fun activity.

Carson thought he was a hotdog hanging out with his 'Student Council' peeps.  Pay no attention to the fact that his shirt is on backwards.  The front side was covered in red gatorade.  Awesome.

This cute girl was my sidekick for the night.
Worth mentioning: If you leave your child in my care - - chances are I'll give them whatever they want.  Including a Coke at 7:00 at night. I can't help myself.

* Saturday morning the adults in my family all went out to breakfast to celebrate my mom's birthday.

Gosh, I love these guys.
So fun to be able to sit and chat and laugh...
and then laugh some more.

And how lucky are we that we all live within about 10 minutes of each other?! Super fun.

* Afterwards, I whipped up TEN pans of Chicken Cordon Bleu.
No big deal.

My friends and I have started a 'Freezer Meal club' {LoL} of sorts....and it has turned out to be FANTASTIC! I'll be sharing ALL of the details of what this little group consists of later in the week!

* Haircuts for the boys afterwards.

After the hairdresser was done cutting Carson's hair he proudly announced "Mom! This is my DREAM haircut!"

Easy to please and I like it!

* We grilled up cheeseburgers on Saturday night with our fun friend Judy and then topped the evening off with ice-cream cones at McDonalds. 

* Sunday morning I whipped up some Breakfast Sausage and Egg biscuit muffins and they were a hit!

My cute niece gave us this recipe and I'll be sharing it this week as well!

*Churchey-church minus London and I.
London woke up with a cold so she and I stayed home for some R&R.

Busy week ahead:

* Dance, Hip-Hop and Scouts for the kids.

* Parent teacher conferences {already!}

* A Paul Penzone for Sheriff open house that we are co-hosting with our friends.

DOTS and Magnifying your Calling.

Last night, I was apart of our Stake Auxilary Training meeting. After we all met together as leaders, we broke off into groups and I was in charge of training the Relief Society counselors over the Additional Relief Society Meetings.

I wanted to give each sister a little handout to take home with them and this is what I came up with...

This handout can be used for ANY calling in the church!

Happy Birthday Mom!

My sweet mom has a birthday today!

If you know her - - you instantly LOVE her.

She's fun, kind and full of charity.

She never complains and always asks the question 'What can I do to help?'

She sews my boys' patches on their scout shirts and she takes London to Burger King just because.

Also worth noting....she loves Diet Coke just as much as I do.

I could go on and on, I really could.

One of the best compliments ever given to me was when I was attending college at Southern Utah University, which just so happens to be located in her hometown - where she was born and raised. 

One day at the bank, a lady who didn't know me, but knew my mom from years ago told me that I reminded her exactly of my mom.

I'll never forget that because I was flattered x 1000.
I aspire to be just like her some day.

This Weekend:

* Friday morning I did my Costco run.
I have such a love/hate relationship with Costco.
I LOVE their stuff but I hate spending over $100 on stuff like toilet paper, paper towels and trash bags, ya know?

* I met up with 2 of my very favorite ladies for lunch HERE afterwards. It's back open {under new owners} and the food is as delish as it was before. {Thank goodness!}

Their cookies have my heart.

* The rest of the afternoon/evening was spent playing with friends.

My friend Chanda WINS at life, too.
She took 10 yes 10! kids to get slushies at Circle K after school on Friday. 

Who does that?!

* Saturday we got chores done around the house and I got to work on my Etsy orders.

* Saturday night we headed over to some of our favorite friends' house for pizza, swimming and a fantasy football draft. {One of many to come, sigh. I'm not so sure I'm ready to be ignored by my boys on Sundays...LoL}.

* Churchey-church on Sunday.
Afterwards we headed over to my parents house for some Lamoreaux family pictures.

We took them on the golf course in my parents backyard and they went about like this....

By the time they were over, my dad was practically curled up in the fetal position, sucking his thumb. We are LOUD when we all get together.

Anyone else glad that the Olympics are ending tonight?
Bring back my Dateline!!! ;)

Fun Finds Friday.

 It's ridiculous just how happy this sight made me feel the other day... 

Rod Works has some ADORABLE Halloween/Fall stuff.
I cannot wait!

I had to do a double take of this product as I was cruisin the aisles of Target this week...

How lazy have we gotten as a people that we actually need something to cook Ramen FASTER than it already does???
{It's only 3 minutes people.  3 minutes!}

I also feel the need to let everyone know about this...

SUCH a great deal {at Target}!
I got London some cute, soft, Cat & Jack jeggings for the fall for like $7.
 P.S. How much do you love ALL of the new Cat & Jack stuff?!?

I tried a new lunch dish this week.
It was from Costco.  I had a sample and it pulled me in.
{I'm such a sucker for that}.
I bought a package - which is actually shocking - because I think this dish is pretty healthy - - and I'm no health nut by any means.

I do love me some quinoa though and this is yummy!
Side note: It needed extra salt.

It's simple + healthy + tasty. A good lunch if you ask me!

And then there's this...

Sadly...the 'Treat Yo Self' usually wins.

Banana Crumb Muffin Recipe.

I am on a recipe ROLL lately.
I do love trying new recipes - - I just have to be in the right mood to get my kitchen all fired up. Who's with me?

Yesterday I had 3 completely droopy and soggy bananas just hangin out in my kitchen staring at me. 

I didn't want them to go to waste so I hunted down a very specific recipe that called for JUST 3 bananas.  

To my luck...I found one!
And they were DELISH!!

They made for the perfect after school snack. 
And they'd be perfect for breakfast too!

{And aren't we all glad that since they have 'fruit' in em...they're no calories?? ;)}


Banana Crumb Muffins

1 1/2 cup flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 mashed bananas
3/4 cup sugar
1 egg
1/3 cup melted butter
1 tsp. vanilla

1/3 cup brown sugar
1/8 cup flour
1/4 tsp. cinnamon
1 Tbs. melted butter

Mix together and sprinkle on top of muffins.

Bake at 350 for 18-20 minutes.

Cheeseburger Tater Tot Casserole.

I tried a new recipe last night for dinner.
It was a HIT!...
with the WHOLE Coombs clan.
{Even my pickiest of eaters!}

It was found on My Baking Addiction and I'll definitely be going back to this site for more yummy goodness. 

I'm 99.9% sure you guys will like it too.

{Side note: I didn't have any relish so that was left out.  My friend who tried this recipe first and recommended it to me had pickles on hand so she just chopped those up and threw em in}.
