A Chocolate Chip Cookie Recipe you MUST try!

This recipe for Chocolate Chip Cookies pretty much rocked our world yesterday afternoon.

{I may have eaten like 10. Or 11.}

It's hands down our NEW fave.

Try it this weekend! You're gonna LOVE it!

Marci Coombs' NEW Favorite Chocolate Chip Cookie Recipe

Mix together:

1/2 cup butter, softened
2 eggs
1 cup sugar
1 cup brown sugar
2 tsp. vanilla

Add in:
3 cups flour
1 tsp. salt
1tsp. baking soda
1 tsp. cinnamon {THIS IS THE TICKET!!!}

Stir in 1 cup of chocolate chips.

Scoop cookie dough onto your un-greased cookie sheet and bake for 8-10 minutes at 375 Degrees.

Honey Lime Chicken Enchiladas + the BEST Green Salsa Ever.

Last night I brought dinner over to one of my very favorite friends who just gave birth to the cutest little baby possible. 

I made my signature meal.

Signature meal = the main thing I bring over to people when I'm bringing them dinner. 

It's worth sharing because a) it's one of our family's favorites and b) Cinco de Mayo is NEXT WEEK and this dish paired up with the salsa and some tortilla chips is the PERFECT meal to help you celebrate.

Honey Lime Chicken Enchiladas

3/4 cup honey
6 Tbs. lime juice
3 Tbs. vegetable oil
2 tsp. chili powder {If you want your enchiladas SPICY! add more of this}
3/4 tsp. garlic powder

Mexican blended shredded cheese
Flour tortillas
1 can green enchilada sauce

Cook and shred 4-6 chicken breasts.
{I just pile up my crock pot with chicken, add 2 cans of chicken broth and cook all day on high.  Then they just fall apart when I go to shred}.

Mix above sauce with shredded chicken. Be sure to coat ALL of the chicken. Put chicken mixture into the middle of the tortilla, sprinkle some cheese and roll up. 

Top with green enchilada sauce and more cheese.

Bake at 350 for 30 minutes covered.
Un-cover and bake for 15-20 minutes more or until cheese starts to bubble.


This salsa is soooooo yummy!

Bonus: It takes about less than 5 minutes to make.

It's got a SWEET taste to it and you can decide how much 'kick' you give it by how much of the fresh jalapeño you add.{I'm a wimp when it comes to spicy stuff so I always use just half a jalapeño.}

Green Salsa

28 ounce can of tomatillos {drain most of the juice}
1/4 cup sugar
1 bunch of cilantro {stems and all - just rinse off}
1/2 yellow onion - don't need to dice
1 jalapeno {I use half and only leave a few seeds in it in an effort to prevent too much spicey-ness.}

Just dump everything in your blender and blend!

Refrigerate before serving.  It sets up when refrigerated 
{gets kind of gel-like} so just stir before you serve.

Teacher Appreciation: Cookies and Milk Bar



Last year I helped create a COOKIES & MILK bar for our teachers to enjoy! I created a sign up online and asked for 12 different people to each bring 2 dozen of their favorite homemade cookies. 

We got SUCH a great variety and I think the teachers really enjoyed it!






I also bought the BIGGEST jar I could find at Target...


...and filled it up with about 8 different packages of cookies.
Everything from OREOS to Chips Ahoy to E.L. Fudge.

I had each teacher GUESS the amount of cookies they thought were in there and the winner took home the jar AND the cookies.
{The answer was 222.  And yes - - someone guess it 
RIGHT ON THE DOT.}


I whipped up the food card labels and banner and went with a pink theme - - since that's what I seem to have a lot of these days in my random collections at home.


It was such a FUN theme and something DIFFERENT than the norm.

Family Home Evening Lesson: Speaking Kind Words.



It's Monday and that = Family Night for us.

During each of these family night's - - we like to give a little lesson {sometimes the kids give it!} on ways that we can improve ourselves or bring ourselves closer to Christ.

Family night ALWAYS ends with dessert and usually a round of London Bridges {my kids STILL love this song/activity -- isn't that funny?}

Last week I taught my lesson on the importance of SPEAKING KIND WORDS to one another.

After we sang our song and had an opening prayer, we went around the room and I asked each person to tell me something GOOD someone had said to them that week.

Then we went around the room and I told them to think of something MEAN or BAD that someone had said to them that week.

It was SO interesting to hear what they said.
{And to the kid who called my kid a loser last week - I wanna punch you in the face. JUST KIDDING!!! LoL.}

We talked about how these different words made them feel.

Then I got out a miniature tube of toothpaste and squeezed it until all of the toothpaste had come out onto my plate.

I asked the kids to try and PUT THE TOOTHPASTE back into the tube. I even provided them with toothpicks to see if that would help them.

It didn't.

YOU CAN'T PUT TOOTHPASTE BACK INTO THE TUBE once it's all squeezed out.

I likened this to our WORDS - - telling them that once we speak mean words to someone - - we can't take them back.  Granted, we can be forgiven of these mean words, but it's most likely that person will never FORGET those words. 

Words are hard to take back - just like the toothpaste was hard to put back into the tube.

Good.  OR Bad.
Words are powerful. 

Then we watched THIS short video on the power of positive words and my kids LOVED it! Such a sweet message.

I challenged them each to SPEAK KINDLY to those around them - - because we never know what an impact those words can make on someone's life.

This Weekend:

* Friday's are quickly becoming my designated day to hit up all of our local Goodwill stores. I'm becoming slightly obsessed.  HOWEVER...the first one I went into SMELLED LIKE someone had gone to the bathroom in the middle of the store {and I don't mean #1}.

For real.
It reeked.

Why are some thrift stores like this?

I held my breath as long as I could and luckily....I scored another milk glass vase for my collection....


* Ran errands most of the morning. I was on the hunt for outfits for my kids to wear for their talent show try-outs.
{These kids of mine are very specific!}

All 3 of them are trying out this week.
Not together. Separately.
Fingers crossed.

* Joe and I met his parents for lunch HERE...


We've recently just discovered this little gem and while their salsa is a tad too spicy for my liking - - it sure is good.

* Date night at a new chinese restuarant that we love LoVe LOVED!!!


SO excited to have found this place.
Growing up back east - good chinese places were on every corner.  
Not so - - here in AZ.

This place is SO yummy and has such a fun patio out in the back.  And let's be honest...Joe and I could've shared ONE. Why did we feel the need to get TWO? They are HUGE!

* Random side note: I've found a new book that I HIGHLY recommend.  It's called "The Christ Centered Home" by Emily Belle Freeman and it is pretty much the BEST thing I've read in a long time.  Friday night I came across this page and it spoke to me like nothing else....


Abe the Babe has always been one of my faves.
This is yet another reason why.

* Saturday basketball game for Grant.


They WON and he scored a 3 pointer in the last few seconds of the game!!! I'm not even lying -- I was SO excited and when I jumped up in the stands to cheer for him I might've peed a little.  

Carson got a new shirt {Goodwill find for $1.99} and he was SO excited to show it Grandpa at the game.


I'm not sure WHO was happier about this find.

* We visited my dear friend Judy in the hospital afterwards. 
Poor lady broke her ankle and she broke it BAD!


She and my mom will probably kill me for posting this pic but it just makes me happy.  They're always laughing  {even in hard times!} and this pic just captures that. 

* Saturday night our ward had a family BBQ at the park right by our house.


SO fun! 
Have I ever mentioned how much I LOVE where we live?
{Oh wait, I have?}

* Churchey-church on Sunday for Joe and the boys -- I stayed home with London who was complaining of a sore throat and in desperate need of a nap.

* Sunday night I had some women over for a committee meeting that I'm in charge of...


If there's not yummy treats involved, than why bother, right?

I am REALLY excited about the things we are planning.
Locals: We are planning our big Stake Womens Conference in the fall and it is going to be FABULOUS!

Teacher Appreciation Breakfast.

National Teacher Appreciation Week is rapidly approaching.
It's May 2nd - May 6th this year.

Unless your kids go to my kids' school.
In that case, our PTO decided to have it earlier this year which I was thrilled about!
{Something about that week leading up to Mother's Day just seems SO busy every year}.

Anyhoozle - for the next week off and on, I'll be sharing some of my very favorite ideas from the past - - for Teacher Appreciation.

If you're a ROOM MOM...here's a tip:

At the beginning of the school year, I have the teacher fill out an ALL about ME sheet....stating their 'favorites' of everything.  Something like THIS one or THIS one.

When Teacher Appreciation Week rolls around...I send out a sheet to all of the parents that says to bring in something different each day throughout the week to surprise the teacher with. 

 {I also make sure that they know this is NOT MANDATORY....they can bring stuff in ONE day, TWO days, ALL days, or NO days.  IT IS UP TO THEM!}

Monday - Favorite Drink Day
Tuesday - Favorite Restaraunt Day
{A small $5-10 gift certifictate to one of their fave restaurants}
Wednesday - Favorite Treat Day
Thursday - Favorite Color Day
{Bring in something with their favorite color on it... a nail polish, lotion, flowers...}
Friday - Card and Picture Day
{Have your child write a note that day for the teacher or draw a picture or send in a picture of your child with their teacher from the year!}

Under each day...I list the 'favorites' that coincide with that day as well.

This Weekend:

* Friday morning I did something I rarely have done since all 3 of my kids have been in school together. 

I went back to sleep after dropping them off at school.

Of course the whole time I was thinking 'I should get up' but apparently my body thought otherwise because I got a good hour and a half little nap in. 

I woke up refreshed and recharged and not wanting to do any of my chores at home so I went shopping...

There was a cute little new boutique in town that I dropped by.....


....although I had the MOST fun shopping around the Antique store that was located just in front of it.

I was in MILK GLASS heaven!
{If you follow me on Instagram - you know I have an obsesh!}

However...I do not like to PAY 'antique' prices for my milk glass so I dropped by a local Goodwill afterwards {I also have an obsesh with that place} and I scored.....

Since I was in the area, I ate lunch {all by my very own self} at one of my very favorite Mexican joints - El Sol Cafe.


I normally don't like 'thick' chips but you guys! these chips have my HEART!!!! As does their salsa.  It's a teeny tiny little joint but it is OH SO GOOD!!!!

* Friday night was our kiddos school SPRING FESTIVAL.
The basketball courts were lined up with food trucks...


....and the kids had fun playing outside with their friends.
We stayed as long as we could stand it before the wind blew us away...plus it was COLD! Like 69 degrees cold!
{I know, I know, we are wimps!}

* Saturday basketball game for Grant.


His team lost by just a few points so we drownd-ed {is that even a word?} out our sorrows afterwards with donuts.


Because donuts make things better ALWAYS and FOREVER. Right?!?

* Saturday night Joe had to stay home and work on taxes {BOOOO!} so London and I picked up my sister and went on a date to Oreganos. 


One of my most favorite friends was working so it was extra fun! We pretty much snarfed down everything in sight and we were so full afterwards they almost had to roll us out.

* Churchey-church on Sunday was actually spent at my sweet friend's Catholic church. 


Her sweet daughter was receiving her First Holy Communion and we were so honored to be apart of it.


Afterwards we all headed back to her house for a super yummy luncheon....


The food from Oreganos was a HUGE hit as was the cute cupcake/cake my niece made.


We laughed our heads off together. SO fun.
SO grateful for such good hearted, kind people in our lives.
