Strawberry Cake Recipe.

It's officially BBQ season here and anything with strawberries always seem to make the BEST dessert for these occasions.

Last weekend I whipped up this recipe and it was SO refreshing.
Serve it with a side of vanilla ice-cream and you are good to go.  


Summertime Strawberry Cake

1 white cake mix {use only the egg whites and make according to directions on the back of the box}
1 cup powdered sugar
8 oz. cream cheese
1 tub of Cool Whip
1 tsp. vanilla
1 tub of strawberry pie glaze {found in the produce section}
4 cups of sliced strawberries.

Make cake and bake in a 9x13 pan.  Let cool.

Mix together powdered sugar and cream cheese and then add Cool Whip and vanilla.

Spread on top of cake.

Add your sliced strawberries and your pie glaze together in a bowl.  Stir until it's well combined.  Add to the top of the cake and put in fridge to chill.

Since pretty much ALL schools have put the ka-bosh on homemade treats, I'm always on the lookout for cute pre-made snack ideas. These 2 Easter ones are at the top of my list and OH SO easy!

This Weekend:

* My Friday morning started out here...

...and it was good for my soul.

The very sweetest family that we have known for the longest time, got sealed together for time and all of eternity.

My heart just about jumped out of my chest and exploded that morning.  The feelings I felt just can't be described.

Afterwards, another one of my sweet friends put on a luncheon for everyone {this occasion definitely deserved to be celebrated!} and it was oh so nice.

As I was sitting inside of the temple, I looked around and saw SO MANY FACES of people that Joe and I have come to know and love with all of our hearts.  We are surrounded with the most kind hearted people in our lives and we are so grateful for that.

* Friday night was date night.
We attended AZ Farm Fest, which was put on by my ever so talented brother-in-law.

It was the perfect night with dreamy weather, good tunes and food trucks {which you know I'm a sucker for!}

We doubled with some of our favorite peeps and we could not get enough of this random little darling trailer. 

We weren't quite ready to head back home to the kiddies afterwards so we hit up THIS PLACE for the best nachos EVER....

I'm still thinking about this delicious-ness today.

* Saturday was spent running errands and doing chores. 
And I don't mean to brag BUT.....

I saved $87.33 JUST IN COUPONS at the grocery store!!!!
What the heck?! This is HUGE because I'm not really a 'couponer' per say. I mean I do LOVE coupons but I always and I mean ALWAYS usually forget them at home. {True story}. I was pretty proud of myself 😝

* Saturday night we headed over to some of our favorite friends' house for our first official BBQ of the season.

This group is a win! win! because our kids all play so well together and us adults have known each other since before our kids were even born so... it's always a blast.

We laughed our heads off together {per usual}, played games and devoured food.  My kind of night!

* Churchey-church on Sunday.

I just LOVE this quote from the front of our Sacrament Meeting program.

* Sunday night we hosted a little BBQ for a few fun families in our ward. 

The weather was perfect {again!} and so we all sat outside on our patio for most of the night. SO fun! Love these people!

On tap for this week:

*The kids go back to school tomorrow!!!!!
I'll admit - - it's been a fabulous Spring Break. And if I'm being honest....I wasn't ready to send them back.  Until today. 😂

* Court of Honor {Scouts} for Grant and a Drama Club banquet for Carson.

* Cleaning and getting my house back to normal after 2 1/2 weeks of leisurely laying around and doing nothing.

* Sitting down with some peace and quiet and watching the Relief Society General Broadcast
I always LOVE their inspired words of goodness.

The BEST Chocolate Chip Cookie Recipe EVER.

Well, my cute friend offered to help make something to lighten my load and so I assigned her to bring chocolate chip cookies.

Little did I know.....
these would be the BEST chocolate chip cookies EVER!

For reals.
Ask anyone who was here.

She's been EVER so kind to share her recipe with us. 

You need to make em this weekend.  I promise you won't be disappointed.

Choose the Right 
Chocolate Chip Cookies


3/4 c. unsalted butter, softened 
3/4 c. brown sugar 
1/4 c. granulated sugar 
1  egg 
2 tsp. vanilla extract 
2 c. all purpose flour 
2 tsp. cornstarch 
1 tsp. baking soda 
1/2 tsp. salt 
1 c. chocolate chips


1.  Preheat oven to 350 degrees F.

2.  Cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.

3.  Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chips.

4.  Using a cookie scoop, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)

5.  Let cool, on the sheet, for five minutes.  Remove from baking sheet and let cool completely.  Makes 3 dozen.

This Weekend:

* Our weekend actually began on Thursday.
Joe took the day off work to head up to our Stake Pioneer Trek with me...

A 'Pioneer Trek' is basically when the youth of our church dress and live like pioneers for 4 days and 3 nights.

They pull handcarts, sleep on the ground, cook their own food, etc....all to hopefully catch a small glimpse as to what their ancestors did for them.

When these sweet kids {350+!} rolled into their camp on Thursday, I was literally a sobbing mess!!!

Where on earth do you find kids that would give up part of their spring break to do this??? And guess what....they were SMILING! I still can't even wrap my brain around it because let me tell you - - Joe and I were there for ONE day and we were completely pooped by the time we drove home and got into our comfy beds.

I was so moved by being apart of this experience for such a short moment.

Did I mention that they were in the middle of the desert, too?
With rattlesnakes?!?!

{Side note: I used to think that the desert was so blah and ugly. I LOVE the desert now.  Like, with all my heart.}

Downside of being outside all day when bushes and trees are in full bloom?  I woke up on Friday looking like this...


No joke.
I sent this pic to Joe while he was at work, telling him it was exactly how I felt. I could barely breathe!!!! And when I did - - I sneezed! It was not a pretty sight.

London and I snuck out real quick to grab some groceries and donuts...
{I prayed that I wouldn't run into anyone I knew with how I looked!}...

London's usual: A donut with sprinkles, a Sunny D and a side of sausage from my breakfast sandwich.

 We spent the rest of the day at home, on our couches, watching 'Moana' and doing absolutely nothing.

I managed to scrape together my favorite St. Patrick's Day meal.....

...of Bangers and Mash.
{Have you had it? It's my fave!!!}

Usually we go HERE for it on St. Patty's Day but since I wasn't feelin so hot, we stayed in and I tried my hand at it.

* Saturday we dropped London off at a birthday party and the boys and I went out to lunch HERE.

London attended my cute niece's MOANA themed birthday party....

...and can you even STAND how cute those headbands are??? My talented sister-in-law MADE them!!!!

I wish you could see it in person.
It's SO adorable!

* Date night Saturday night HERE with one of our favorite couples.

This is such a fun place if you've never been.
We ate inside and their salad bar >>> everywhere else.

* Churchey-church on Sunday.
We napped afterwards and grilled T-bone steaks for dinner. 

Cubby thought he had won the lottery when we gave him one of our bones. {Side note: Cubby is now 20 pounds!!! Holy cow. He is growing SO fast!}

I baked banana chocolate chip bread for dessert...

And we ended the evening together watching AFV.

Spring Break week 2 is up this week:

* Hoping to turn off the a/c - - it's been SO HOT HERE!

* Hoping to take the kids to see 'Beauty and the Beast' - - have you seen it yet?

* Taking London to the American Girl Doll store for lunch.
We've never been. 
I may be as excited as she is.
