Bacon Pasta Salad Recipe.

BBQ season is upon us and chances are, you're going to need a yummy side to bring to at least one of those BBQs this summer.

Look no further.

I just discovered this recipe and it's my new fave.

Bacon Pasta Salad
{Adapted slightly from Life in the Lofthouse}

1 package tri-color rotinia pasta
1/2 cup mayo
1/2 cup sour cream
1 package dry ranch dressing mix
1 tsp garlic powder
1/2 cup milk
8 slices of bacon, cooked and chopped
1 large tomato, chopped
1 cucumber, chopped
1 can of black beans, rinsed
1 cup shredded cheddar cheese
Salt & Pepper to taste

Boil noodles for about 8 minutes. Rinse and set aside.

In a small bowl whisk together the mayo, sour cream, ranch, garlic powder and milk.

In a large bowl add the pasta, tomato, cucumber, black beans and shredded cheese.  Toss with dressing. Salt, pepper and season to taste. Chill before serving.

I'm going on a 12 hour car drive 😳 and need a good book or three that makes the time fly by quickly.

2. I need yummy RESTAURANT RECOMMENDATIONS {for dinner} in Salt Lake City.

We are heading there for a wedding and are going out with some of our favorite friends to dinner one night.  I want something GOOD! Thanks to some blog reader recommendations a few years back - we discovered THE RED IGUANA which we LOVED! We've been back twice! Now I'm wanting to try someplace new.  

Any ideas?

This Weekend:

* Friday morning I finished up a wreath for a silent auction taking place this weekend for a friend's brother. 

Doesn't the trunk of your car always have a stash of caffeine in the back and is always covered in crumbs? 😅

* I met 2 of my favorite lady friends at a new place for breakfast...

I'll definitely be back.
{Locals: it's right next to the Costco at San Tan}

I asked our waitress what the most popular dish on the menu was and she said the 'stuffed hashbrowns' so naturally, I went with that. was super healthy, too. 😆
Regardless, it did not disappoint!

* I ran a few quick errands afterwards.
One of them being a stop at Goodwill...
{Seriously guys, I have a problem!}

I CANNOT resist their books for my kids!!!
They are the best bargains around! 

This one was mandatory because we call Cubby 'the farting dog' as well.  No joke people - - his farts REEK! Like...take our breath away REEK! 

Then I spotted this one {but didn't buy it} and I was completely intrigued because....Cubby sometimes eats his poop TOO and it totally grosses us out. {Hence, the smelly farts}. This is probably WAY more information than you cared to know about my dog, right? 

* Friday night Grant had a double header with his basketball games...

They lost the first game and WON the second!
So much fun to watch...Grant scored NINE points the second game! So proud of him. {And yes...that shot went in!}

* Saturday morning was grocery store/donuts time.
My boys insisted that they did NOT need a lid for their ginormous Coke. It was sort of an 'I told ya so' moment.

* Saturday matinee with fun friends.

You guys! This movie was SO funny and SO cute.
It WAY exceeded my expectations.
My kids died laughing thru it all!

* Satuday night we hosted a BBQ at our house for my family.

It was in the high 90s so...swimsuits and water on the tramp with cousins was mandatory.

We feasted on burgers and brats, my mom's potato salad, pasta salad, chips, veggies, dip, watermelon and chocolate cake for dessert.  We were STUFFED afterwards!

Loved eating outside.  There aren't too many more nights where we'll be able to do this.  It hit 100 degrees already today!!!

* Sunday looked a lot like this...

Poor London had the barfs.

I stayed home with her from church and ended up scrubbing my bathrooms because EW. Praying no one else gets it now and that she's on the mend tomorrow.

Poor muffin.

Fun Finds Friday.

* Target has cleared out all of the Easter stuff from their $ bins and stocked em up with brand new items.  It made me a little too excited.

Donuts + pom fringe make ME happy.

I've always wanted to throw my kids and their friends an end of the year 'celebrate that school is out' ice-cream party. This might just be the year and this chalkboard would be OH SO PERFECT for it.

Paper runners are my fave.
They're the perfect way to jazz up a table. 
They have LOTS of cute prints, too.

Your friend has a birthday coming up?
Someone you know got promoted?
Bake up some goodies and deliver em on this cute melamine plate. 

Need a game for the kids to play while they wait for guests to arrive? This WORD SCRAMBLE is where it's at.

2fer Tuesday {on Wednesday}.

Anyone else up until 11:45 pm last night working on taxes?
Nope? Just us?


I'm so glad I came across this one a few days ago.
I LOVE everything it says. 

Favorite line:

This {Easter} Weekend:

* The kids had school off on Friday and so we went spent most of the morning at the dentist. 

It's not really how I wanted to spend their day off but it was the only time that worked with our schedules.  Plus, we have an AWESOME dentist that we go to so it really wasn't bad.

London was the only one with a tiny little cavity.
She wasn't so sure about getting it filled...

Thank goodness for laughing gas! 
Not really sure how my boys made it outta there with no cavities....half the time when I check their teeth, they look fuzzy. {Ok not really, but you know what I mean. Boys!}

Afterwards we had lunch HERE.
I always forget about this place and man - is it good!
Well..except for their ranch.  
Their ranch needs to step it up a notch. 

* Friday night the boys had some friends over to hang out.

My kids have the greatest friends.
School friends, church friends, neighborhood friends - - we are so blessed! 

It wouldn't be an official hangout without a drink run, either.

So funny hearing these kids chat. 

* Joe and I spent most of the evening watching....


OH.  My.  GOSH!.....
It was a 3 part series that we had DVR'd from last week and even though we knew the ending...we were captivated! 

So mind boggling, really.

* Saturday morning we made a grocery store/donut run.
A 2 in 1. 

Is anyone else's kids obsessed with TECH DECKS right now?  Heaven help me.  I dont know what's more annoying....the water bottle flipping...or these? 😂

* Grant had a basketball game Saturday afternoon...

...and they got creamed. And Grant got fouled and pushed to the ground and blacked out.  So that was fun. 😁 Better luck next week! 😝

* Dinner at some of our favorite friends' house on Saturday night. 

My friend made THESE chocolate peanut butter chip cookies for dessert and they stole the show. Oh and notice the grime under my thumbnail? That's because we had the most delicious BBQ'd chicken drumsticks and my hands got all sorts of nasty.  

* Was anyone else as excited as Joe and I were that SNL was on LIVE at 8:30 pm Saturday night here on the west coast? Why don't they do that every week?

LOVED Jimmy Fallon as the host. 
LOVED his opening monologue HERE.
{I've always loved that song}.
And LOVED Melissa McCarthey as Sean Spicer, once again.


* Churchy-Church on Easter Sunday.

Grateful for this crew.

Everytime there's a special musical number, I instantly tear up. 

* Easter dinner was at my parents house this year.

It wouldn't be a Lamoreaux family get together without someone {usually Uncle Kirk} photo bombing everyone and everything.

But a good sick.
Nothing beats the traditional ham dinner with all the sides.

So grateful to have my whole entire family live close by. 
My sister's co-worker Pedro joined us this year and he probably thought we were the rowdiest people ever

Peanut Butter Chocolate Chip Pie.

I tried this new recipe a couple of weekends back and it's worth sharing.  Its super yummy and even better the next day for breakfast. 

Wait. What?😂

PB + Chocolate is one of my all time fave combos. 
I got this recipe from Bake or Break and I have a few tweaks that I've added to it so make sure to pay attention to the side notes.


  • CRUST:
  • 1 & 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted

  1. Preheat oven to 350°F.
  2. Combine all the crust ingredients in a medium bowl, stirring until moistened. Press the mixture evenly on the bottom and up the sides of a 9-inch pie pan.
  3. Bake for 10 minutes. Set aside to cool.

*I'll admit.  I was very tempted to just buy a premade graham cracker crust for this.  And while it would have saved me about 10 minutes of my life....this recipe for the homemade crust is the BOMB! The cinnamon just makes it.  It's DEE-LISH. So don't be lazy.


  • 8 ounces cream cheese, at room temperature
  • 1 cup creamy peanut butter
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 & 1/2 cups heavy cream or a tub of Cool Whip
  • 3/4 cup miniature chocolate chips

  1. Using an electric mixer on medium speed, beat the cream cheese, peanut butter, confectioners’ sugar, and vanilla until combined.

  2. In a separate bowl, use an electric mixer with a whisk attachment to whip cream until soft peaks form. 

* I would definitely use Cool Whip next time.  It's easier and in my opinion tastes a little better.

  1. Gently fold the whipped cream into the cream cheese mixture.

  2. Fold in the chocolate chips. I only had regular sized chocolate chips, not mini. Next time I'd definitely use the mini.  The regular size seemed a tad big.  But that's just me being picky.

  1. Pour the filling into the baked crust. Refrigerate for about 4 hours, or until set, before serving. Keep pie refrigerated. I feel like the longer it sets, the better it tastes so this could even be made up the night before!

This would make a super yummy dessert for Easter dinner.  If you try it - - let me know!
