July Visiting Teaching Handout.


Today is the LAST day of June - can you even believe it?!?

Tomorrow we head to much cooler temps {hallelujah!} to celebrate the 4th of July.  To say we are EXCITED for this annual vacation...is an understatement.  

I'll be posting updates while we are there - - but I wanted to make sure to get these NEW JULY VISITING TEACHING TAGS up and ready to dowload for all of you early birds!!

2 Recipes Worth Sharing:

Whenever I come across recipes that I TRY and LOVE - - I feel the need to share them with my blog readers.

Because EVERYONE should taste in this goodness, am I right?!

I made these 2 recipes within the last couple of weeks and they were YUMMY! And easy! So it's a win-win!!!

Strawberry Cheesecake Salad

12 ounces Cool Whip
1 {3 1/2 ounce} package JELLO cheesecake flavor instant pudding mix
3 {6 ounce} cartons of strawberry yogurt
1 lb. fresh strawberries, sliced
3 bananas sliced {just before serving}
A few handfuls of mini marshmallows

  • Thaw whipped topping and in a large salad bowl stir together whipped topping, yogurts, and pudding powder. Let this set up in the fridge for at least an hour before serving. Wash and slice strawberries. You can add strawberries to salad or wait to add them with sliced bananas and marshmallows just before serving. Keep refrigerated.
***** This salad would be good with blueberries, blackberries, raspberries - - whatever is on sale! Just throw it all in!

One Pan Roasted Garlic Potatoes 
and Sausage

**** I used green beans instead of asparagus because EW! I also upped my cooking temp to 425 because it was taking longer to cook than I'd like.  Plus, I like my veggies cooked more on the DONE side so I added about 30 minutes to the whole thing.

Seriously yummy!

2fer Tuesday.

2 ICE-CREAM RECOMMENDATIONS:


I had a FREE coupon for this at my local grocery store.
I'll try anything FREE at least once!
{Jk, jk}
This brand is not as creamy as regular ole ice-cream {I mean come on, how could it be with only 240 calories?!} but it does the trick when you're a) craving something sweet and b) craving ice-cream without all the fat.

I LOVED it!


Also had a coupon for these.

I had a VERY specific idea in mind and they were SO easy to work with.  I just LOVE LOVE LOVE it so much.

This Weekend:

* Friday morning we lounged around in our jammies until we had to go pick up my car from the shop.  Only Carson wanted to go with me which meant...


...he was less than thrilled that there was a Goodwill close by that I made him go with me to.

SOME DAY my kids will enjoy thrift shopping with me.
I just KNOW it!😜

* Date night Friday night.
My only requirement was that wherever we went...had to have a STRONG Diet Coke. {One of those days!}


We ate HERE and that dessert was as mouth watering as it looks.  I've been dreaming of it ever since!

* Saturday morning I had to practice the dreaded organ for church so the boys tagged along with me and brought some friends to play hoops.


You guys!!!
Playing the organ is legit a beast!!!


It is OH SO DIFFERENT than playing the piano.

Lunch afterwards at my new favorite place...


If you like fried chicken {seriously... who doesn't?} then this place is for YOU! 


The honey butter rolls and side of gravy they serve with it is SO. DANG. GOOD.
{Did I mention it's all REALLY low-fat?!😝}

* Saturday night we had our darling missionaries over with some friends for dinner.


Our friends brought over their slip and slide and Cubby and his brother pretty much took over.



I was reminded of just how nasty the whole 'wet dog' smell is.
Ew!


Mud and grass were everywhere but - - who cares.
It's been HOTTER than HOT outside and the kids needed a nice cool down.

* Churchey-church on Sunday.


London gave a talk in primary...


And then lost another tooth on Sunday night.
I just love that smile!!

* Leftovers on Sunday night.
I LOVE that my husband was the one to suggest it.
Messy kitchen + laziness = leftovers.
And man, were they good.
It was a WIN all around.

A few Fun Finds Friday + Goodwill Goodies.

This excessive heat {You guys! It got to 122 degrees one day!} has really put a damper on my FUN FINDS.  Just getting IN and OUT of my car is nasty. 

Thankfully, I found these finds last week and they're worth sharing so...

They have a whole package of different cute chalkboard signs - - like the kind you fill out for pictures and stuff?

My 2 FAVORITE Summertime Recipes.



 My mom made this pie for us growing up and it's a MUST for summertime. It's one of my FAVORITES and it's surprisingly EASY! Also: strawberries are on SALE this week at Sprouts so...there's no excuse for you not to try it.

Marci's Mom's Strawberry Pie

4-5 cups strawberries, quartered
1 cup water
1 cup sugar
Dash of salt
2 HEAPING Tbs. Cornstarch
2 Tbs. Strawberry JeLL-O
1 Tbs. butter
1/4 tsp. red food coloring

Bake pie crust {I purchased a Marie Calendar's frozen pie crust and it was ready within 12 minutes!} LET COOL COMPLETELY!

Mix sugar, cornstarch and water.
Stir constantly over medium heat.
Bring to a boil, stirring constantly - mix well until thickened. 

Remove from heat andt hen stir in JeLL-O, butter and food coloring. Fold strawberries in and pour in baked pie shell.

Refrigerate for a few hours before serving.


Everytime my family has a barbeque, one of us is assigned to make our Grandma Lamoreaux's Famous pasta salad.  It's quite simple really and basically just involves boiling your pasta, chopping up your veggies and mixing together your dressing.

Here are SOME of the things that MY Grandma used to add to HER salad:

*CELERY {allergic to it}
*SHRIMP {BLeH!}
*RADISHES {Double BLeH!}
*CHEESE {Yum!}

While all of those things are yummy {to some!} here is what I now add to MY version of the salad:

*Green peppers
*Cucumbers
*Tomatoes
*Green Onions
*Cheese

Peas would even be good in there.
{If my kids didn't barf at just the SIGHT of them!}

Basically....you can add ANY or ALL of the above ingredients.

As for the rest of the salad:

Boil your pasta according to directions on the package.
{My favorite kinds to use for this salad are either the
mini seashell noodles or the rotini corkscrew noodles}.

Drain, rinse with cold water and allow to cool.

While pasta is cooling...chop up all of your vegetables.
{I usually chop up my cheese and add it to the mix very last!}

As for the dressing...mix together 1/2 cup of mayonaisse and 1/2 cup of Miracle Whip.

In a separate bowl add 1/2 Tbs. - 1 Tbs. of sugar....mixed with water.  
{Just enough water to make it a runny consistency.}

Add this sugar water to the dressing mixture.

Mix everything ALL together.

Season with: Salt, Pepper, Garlic Salt, Onion Powder...whatever you'd like to give it that extra KICK!

Chill until serving.

It's really really yummy.
And even yummier the next day!

Tonight I tried this recipe...

It was seriously DEE-LISH you guys!
I didn't grill mine {because Joe wasn't home and hello? I don't even know how to turn our grill on. Lame, I know}....

so I baked mine in the oven at 400 degrees for about 30-40ish minutes total. 

I also added some green chili sauce on the top and then we served it with a side of sour cream.  

2 RANDOM THINGS:

1.  Yesterday the temperature in my car read 122 degrees.
Yup, you read that right.
1-2-2- DEGREES!!!!!

It's pretty much an oven here in AZ.
Like....imagine a blow dryer ALWAYS blowing on your face when you walk outside and that's what it's like here.

We're hibernating this week.

Ya know when in cold weather states...people stock up on food and necessities so they don't have to go out in the blizzard?

That's what we're doing here....but in the heat.
I literally waited for the sun to go down tonight so I could take London to the library.

I'm looking forward to our yearly trip up to southern Utah where we stay in a cabin and I spend most of the time on the front porch reading.  I have a long list of books I want to read and this is at the top.  Has anyone ever read it? Thoughts?? Book recommendations?
