2fer Tuesday {on Wednesday}.


Last night I made THESE copycat PF Chang's chicken lettuce wraps and they were AHHH-MAAZZING!!

I've made them once before and my family legit has snarfed them down both times!

Add em to your weekly meal planning.

This Weekend:

* Friday morning temple trip.

2 things I LOVE about this pic:
1. The flowers on the temple grounds - - THEY'RE GORG!
2. My temple bag = my Grandma's vintage suitcase
It's like I take her with me {in spirit} every time.
* Errands afterwards.
However...I had my fancy high heel booties on and I'm not so sure how you high heeled lovers do it.

I actually cut my errands SHORT because my feet were killing me so bad.😅

Flip flops or BUST!

* Dinner date with the boys on Friday night HERE.

Carson practically LICKS the bean dip bowl clean EVERY time. Also - - their mini chimis with jalapeno cream cheese is where it's at.

 went to the school DADDY DAUGHTER dance!

This event is OH SO SWEET and I LOVE that I get to spy help out at it each year.

* Saturday morning walk with Cubby and our newest roller-skater....

I love that EVERY time she falls she yells,
"I'm OK!"

* Joe went into work Saturday afternoon, the kids hung out with friends and I treated myself to a MUCH needed pedicure...


Like - - really, really nasty.

Like - - I felt BAD for the poor lady who had to work on my feet - - NASTY!

I killed time while they were scrubbing away on my feet reading up on how accurate 'The Crown' is.

Anyone else obsessed?
Anyone else SUPER bummed that the actors and actresses change next season?

* Date night with some of our favorite friends on Saturday night.  We ate HERE - - it's a local favorite and EVERYTHING I've ever had there is SO GOOD.

* Churchey-church on Sunday.
It was my turn to teach for the 2 ward conferences that we visited...

I showed THIS short clip at the beginning of my lesson.
I just love the tree and roots analogy.  

6 hours straight of church is no joke!

* We went over to Joe's parents house for Sunday dinner.
We all met at the park first and launched some rockets - -
 my kids LOVE this activity!

We brought Cubby along and he was THIRSTY!

We had delicious lasagna, salad, rolls and all sorts of desserts afterwards...

These 3 cousins LOVE playing 'house' in Grandma's guest room.

I was so super excited when Deseret Book allowed me to review the brand new Gentri cd "HYMNS" for them.

New Sunday tunes???

I'm naming this CD my new SUNDAY SOUNDTRACK.

It's full of church hymns by this dynamic trio and I LOVE LOVE LOVED it!

Their voices soothe the soul.

I spent a lot of time in my car yesterday, traveling back and forth between ward visits and this cd was just what my heart needed. has 2 of my ALL TIME FAVORITE hymns on it.

Beef Stew Recipe.

Tomorrow it's supposed to be only 67 degrees.

That's SOUP weather here in AZ!

I'm sharing my very FAVORITE recipe for Beef Stew so you can enjoy it ALL weekend long!

Bonus: It's a crock-pot-er!!


Marci Coombs

3 large potatoes, peeled and cut into pieces
Half a bag of baby carrots, cut into chunks
2 lbs beef chunks
1/3 cup soy sauce
1/2 tsp. pepper
3 Tbs. flour
 1 onion, thinly sliced
1 can {10.5 oz} condensed beef broth
1 {8 oz} can tomato sauce
1 tsp. salt

Layer potatoes, carrots and onion on the bottom of your slow cooker.  Top with meat and then sprinkle with soy sauce.

Add salt, pepper and flour.

Combine beef broth and tomato sauce in bowl and then pour all over everything.  Cover and cook on LOW for up to 8 hours or on HIGH for 4-5 hours.

YUM-A-LISH with fresh bread or warm rolls!

Who else is excited about our new prophet

This Weekend:

* I was so relieved it was Friday that I celebrated a little bit by going to Goodwill.  I know, I know, I'm so wild and crazy!

* Tried to get some work done around my house but mostly avoided it.  {Story of my life!}

* Went for a Friday afternoon drink and cookie run with one of my favorite friends...

You guys! Have you tried Swig's coconut chocolate chip cookie??? i just discovered it and it's my new fave!
Tastes like an Almond Joy bar.

* We stayed in Friday night.
Ate taco salad for dinner.

This meal cracks me up.
It's by far the easiest thing EVER to make yet - - its my kids' FAVORITE!!!

Such an easy to please bunch 😂

* Afterwards, we celebrated Grant making his junior high talent show and Carson rocking it in his school's running club race with a trip to the DQ for some ice-cream.

Only one of my kids would choose a soda at Circle K over ice-cream....😂😂😂

* We sent the kiddies upstairs when we got home so we could vegg out on the couch and watch our shows.

Oh - - and we also celebrated National POPCORN day...

Please oh please tell me you saw the 20/20 on this family:



There are no accurate words to describe the atrocity of this situation.  WE WERE FLOORED!!!!!!

It boggles my mind.

Also - - I think as part of the punishment for the dad, he should have to shave that nasty haircut away.

* Saturday morning we all slept in and it was glorious.

Don't tell my kids I'm telling you this but....
they still LOVE to get in bed with us for Saturday morning snuggles.


Usually, it just involves Cubby stepping on everyone and licking their faces but I'll take the fact that my kids still want to be around us!!😆

* We checked out a new soda shop in town on Saturday afternoon....

The Coombs have never been known to pass up $1 drinks and cookies!!

We had to get one of each {ok we didn't have to but - - $1!! come on!} and the winners were the chocolate chip and the snickerdoodle.

Also - - fun fact about myself.
I love going to these soda shops but I ALWAYS get just straight up Diet Coke.  SOMETIMES with a fresh lime.

Never any mix-ins.
Who am I?

Honestly - - I go for the cookies.

* The rest of my day was spent organizing my craft room 
{yet again...}

* Churchey-church on Sunday.
As part of my calling in our stake, I get to visit different wards when it's their ward conferences.

Luckily, this past weekend I didn't have to teach {yet} so I just got to sit back and be spiritually fed.

The theme for our ward conferences is:

It's been so great learning about how WE can become rooted up in Jesus Christ.  I just love this discussion.

There's a $50 cash prize involved so he's pretty stoked.
