Strawberry Cupcakes with Cream Cheese Frosting.

I forgot about how GOOD these cupcakes were until I made em back up today.

They are the PERFECT spring time treat, they're EASY and they'd be sure to be a HIT at your Easter dinner this weekend!


1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant JELLO 

1 (15-ounce) package frozen strawberries in syrup, thawed and pureed

4 large eggs 
1/2 cup vegetable oil 

1/4 cup water


Preheat oven to 350 degrees F.
In a large bowl, combine cake mix and
JELLO. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. 

Pour into prepared pans, and bake for 25 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
Cream Cheese Frosting
2 - 8 oz. packages of Cream Cheese
1/2 c. butter, softened
1 tsp. vanilla
2 1/2 c. powdered sugar
pinch of salt
Mix cream cheese and butter until smooth.  Blend on slow as you add vanilla, salt and powdered sugar.  Once blended, turn mixer on high and blend until nice and fluffily.  Use immediately or refrigerate.

General Conference Treat Tags.

This weekend is one of my favorites! 
For those who don't know much about the LDS faith - - it's General Conference this weekend!

That means...we get to stay home and watch church on the TV in our jammies - - usually with lots of treats surrounding us.

It's always a spiritually uplifting weekend and one that I always look forward to. 

Chips and queso is one of our family's very favorite Sunday snacks!! I thought these tags might be fun to deliver to the family's that Joe Home Teaches and the ones that I Visit Teach as well!

And since Conference falls on Easter weekend this year...why not throw some chips with the queso in a cute little basket to make things extra festive?

I don't know a family that wouldn't like this snack, right?

Easter Teacher Printable.

I just remembered that my kids get Friday OFF from school for Good Friday so we'll be sending in our Easter goodies on Thursday!

This Weekend:

* Cubby had his annual check-up + vaccinations.

He was a champ!
He even let the doctor take his rectal temp.
{True story: Last time he pooped all over our doctor and she had to have her husband bring her up clean clothes!}

Also - how has London's hair gotten so long so fast?
It's about as long as Cubby's body 😂

* Oregano's for lunch.

Our sweet 3rd grade teacher {ALL of my kids have had her!} waitresses {does anyone still use that word?} here on the side and it's always such a treat to go and visit her there.

* Date night Friday night.

We ate HERE.
It's one of our favorites.
My only request for the evening was that we went somewhere with GOOD Diet Coke and this place is always a WIN for that!

We sat outside on the patio and it was so nice to finally have some one on one time together. We chatted about anything and everything. Goals we have that we'd like to accomplish, some exciting things in the near was so nice and relaxing and just what we needed.

The weather was dreamy and the sunset, dreamier.

* Saturday Uncle Adam brought over one of his pups for some play time.

It was a little like David and Goliath at first 😂 but these 2 warmed right up to each other and we're so excited to have more doggies in the family.

* Joe took the boys to see Black Panther Saturday night {they loved it!} while London and I met my mom for dinner.

The chicken fajita bowl at Moreno's is what I dream about.
{Doesn't take much to excite me guys!}

* Churchey-church on Sunday.
Our Relief Society lesson was all about
Keeping the Sabbath Day Holy.

One of my favorite points brought out:

"How we act on the Sabbath Day is a direct reflection of our relationship with the Savior."

I just love that!

* We had Joe's bro and wife over for Sunday dinner.
Roast, potatoes and all the works.
{Why does a roast taste SO extra good on Sundays?}

Cubby got the best of Kent's house slipper while we laughed our heads off playing Quiplash.

Easter Place Setting Ideas.

Easter is one week from Sunday!!!
Can you even believe it?

How oh how does time rush on by so fast??

If you're hosting Easter dinner....or brunch...or ANYTHING at your house! are some cute ways to make your tables look pretty:


Those carrots in the middle of that vase with the fresh flowers might just be my favorite thing ever!

So clever, right?


If carrots aren't your thing - how about lemons?
These would look GORGE with some yellow daffodils!


Love the green, leafy sprig on this one.
And that bunny in the middle is a cookie!


Looking for something simple?
Just add a fresh flower to the napkin roll and tie with a pink satin ribbon. 

Easy Peasy.


I also love the simplicity of this white egg with a name handwritten on it. And those little nests you can find at any craft store right now.


I have a collection of pastel colored ceramic egg cups and I never do anything with them.  LOVE this idea of putting soil and flowers in them and using em as a place setting. 


Saved the best for last.
Yup - just a peep and a name card.

That's it!

Just cut 2 tiny slits on the ears and place the card right in there.

2fer Tuesday.



This movie is based on a TRUE story and is on Netflix.

Jack Black does a phenomenal job and I was FASCINATED with this whole thing!! 


This was a 2 part documentary on A&E all about Waco, TX {before Chip and Joanna made it cool} and David Koresh.  We watched the first part last night and I'm already ready to put the kids to bed and watch the second part with Joe tonight!

Sooooooo crazy!!
And to think that there are STILL followers today!!!

This Weekend:

* Friday morning we all slept in and then I made a big breakfast of scambled eggs + green chiles, sausage, hashbrowns and English muffins.

{Fun Fact: When you buy English muffins - - always buy the Thomas ones.  Never buy the store brand.  THERE IS A DIFF!}

* I did some Visiting Teaching Friday afternoon and brought along some GREEN treats....

* Date night Friday night at the Tempe Improv with some of our favorite friends.  We saw...

You guys!!
If you have never heard of this comedian - - you MUST watch his Netflix special: Happy Face.

He is my FAVE!
I seriously had to cross my legs I was laughing SO hard!
{Because you know...pee?}

We met him afterwards and I may have told him that we should be BFFs.  

Sadly - I don't think he agreed.
{I'll give him time.}

We're so blessed to have such fun friends!

Afterwards...dessert at Hurts Donuts.

I have ALWAYS wanted to try this place - it's gotten such great reviews and it did not disappoint.

{Get their Chewbacca. Or anything with their toasted coconut.  YUM!}

We stayed out until midnight chatting and laughing up a storm.  {We haven't stayed out that late in forever! Normally we're in our jammies on the couch and watching Dateline by 9:00! 😅} Such a fun night.

* Saturday {St. Patty's Day} we whipped up some GREEN bread {recipe HERE - and it's more like a cake! So yummy!}

* One of my cute friend's hosted a little Shamrock Shin-dig.
She went all out: Mississippi mud roast, shephards pie, corned beef and cabbage...the works!

I tried to only 'sample' the goods because Saturday night we went out with one of our favorite couples to a new seafood joint for dinner.

And yes - - I don't like seafood.
But I took one ofr the team.
{It's pretty much Joe's FAVORITE!}

I DO like clam chowder and theirs was probably the BEST I've ever had. Not exaggerating.  

Our friend {the cute blonde in the middle} is the manager and she spoiled us rotten!! She brought me chicken wings and artichoke hearts and I was in heaven!!

Also: their BUTTER CAKE for dessert was complete BLISS and I've been dreaming about it ever since!!
{It had me at BUTTER!}

{Locals: this place is at Tempe Marketplace. SO good! Even for non-seafood lovers like me.😜}

* No churchey-church on Sunday for London and I.
She's just been getting over a cough so we thought it was best to sit this week out.

* We had Kirk and Adam over for dinner.
Joe grilled cheeseburgers and I made my Grandma's Applesauce Oatmeal Chocolate Chip cookies for dessert.
{These cookies will forever remind me of my childhood!}
