Lemon Orzo Salad.

I've been on an orzo kick lately.
You can find it in the grocery store next to most rice and /or pastas.  

It's easy to cook and supposedy good in protein and fiber.!

Here's a YUMMY recipe to try if you're a fan.  
I made it up a few weeks ago and am going to make it up again this weekend, I loved it so much!

Lemon Orzo Salad

12 ounces orzo, cooked according to package, drained and rinsed with COLD water

3/4 package of bagged spinach, chopped

1 can chickpeas or garbanzo beans, drained

1 cucumber, diced

1/2 red onion, diced

Fresh basil leaves, chopped - - add however much you like.
This MAKES the salad!

3 lemons,  juiced

1/4 cup olive oil

3/4 cup feta cheese

Salt and Pepper generously, to taste

Mix everything together, chill and serve!

Seriously YUMMY!
