Coombs Summer Mix 2016

Last Day of School 2015-16

Our family has a tra-dish of making a NEW Summer MIX Cd EVERY summer.  We've been doing it for about 5 years now and it's something we ALL look forward.  

Well...maybe not Joe so much.  His musical taste is way different than the kids and I's musical taste.... ;) Let's just say that when we make our long haul every summer to Utah - - he puts in his headphones..heehee.

Coombs Summer Mix - our soundtrack for the summer!


It's become a little summer tra-dish with our family to make a soundtrack of sorts each year. 
 {We're going on 4 years now with making one}. 

We LOVE music.

We constantly have the radio on in our car.
Our musical taste {and when I say 'our' this does not include my husband.  It includes the kiddos and I.  Joe usually rolls his eyes at 'our' songs which makes it even MORE fun to turn the volume up and sing loudly to on road trips. Smile.} consists of Pop - Top 40 jams.

Every year we make a 'Family Summer Mix' of songs to jam out to in the car. {See past ones HERE}.

I am FINALLY getting around to making our 2016 version and I've discovered this band - - Fitz and the Tantrums.

Have you heard of them???
They're SO good I'm adding TWO of their songs to our cd.

When I first found out that the format for this season wasn't going to be the 'norm'....I was a little bummed.

However...I'm actually ENJOYING watching the younger kids.
Man! are they talented!!!
Can't wait to see them 'team-up' with the All-Stars.

Hands down this is my fave summer show, year after year.


These are nasty.
N-A-S-T-Y.
Don't waste your money.
Our local grocery store had a FREE coupon for these last week and you KNOW I can't pass up FREE - - - 
Boo. Sadly disappointed.

Coombs August Mix.




My kids like to jam out in the car. {They also like to take pictures of themselves with my camera when no one is looking.  See above}.  The past two trips we've taken on the road, I've made our little family a MIX CD...with songs that EVERYONE can enjoy.  {OK...the kids and I enjoy it most.  But don't let Joe fool you...he really does like some of our teeny bopper stuff.  Even if he won't admit it.}  HERE is our first summer mix.  And here...is what we came up with for our August Mix {road trip to Greer}.  We've pretty much listened to every single song now close to a thousand times.  Even London knows ALL the words.  If you like FUN songs....then you will like these:

Utah Summer Fun!

The Lamoreaux family has made it a tradition to celebrate the 4th of July in southern Utah every year.  We look forward to it ALL YEAR LONG.  We rent the same fabulous cabin:




And we have a blast!  If I had to pick our TOP 5 most FAVORITE THINGS about this year's trip it would include:


1. Visiting our cute friends the Knudsen's who live in Gunnison.  The kids have such a blast with their kids.  And did I mention Shanell JUST HAD TWINS 3 weeks ago?  It's true.  And she still insisted we come and visit.  Can you say SUPER MOM?  {Wish I had taken a pic of those cute little babies! They were precious and oh so snuggly!}



2. Sitting out on the front porch and just.....RELAXING!  We LOVED the weather and literally soaked it in any chance we could get out there.  It. Was. BEAUTIFUL!!!





3. Celebrating the 4th of July in Cedar City.



4. Riding ATV's all around Duck Creek.  We couldn't get enough of it! So FUN!




5. The Scenery.  It just doesn't get much prettier than this!


Close Runner-ups would have to be:

* Eating at the Top Spot and Pizza Factory

* Reading outside while listening {and smelling} the fresh rain

* Ping Pong tournaments

* Xbox tournaments

* Pool tournaments

* Counting how many Wood Chucks we could find.  {They were EVERYWHERE!} My mom taught the kids the 'woodchuck' tongue twister and they {almost} proudly have it down.  Even little Londy.

* Going into the village to get our tri-hourly Diet Coke's.  

*Jamming out to the Coombs Summer Mix in the car. {Proud to say Joe listened to it well over 100 times and didn't even complain ONCE!}

* Sleeping with the window's open.

* Catching bugs.  

Last but certainly not least.....the PEOPLE WATCHING.  And don't you worry your pretty little heads my fellow people watching friends....I'm devoting an entire upcoming post all about it.  Pics were taken.  I've got proof!

What I'm Listening to and What I'm reading...



Summer means road trips, right?  ESPECIALLY for those of us who live in the SWELTERING DESERT where temps are 110 degrees even at 10:00 at night.  {It's true!} I don't know about you...but I like to have LOTS to read in the car and LOTS of FUN tunes to listen to on MY road trips.  {Sadly, the kids' and I's FUN tunes do not = Joe's FUN tunes...good thing he has a set of ear phones and an iphone, right? *Smile*}

Finally!  This has been on my 'to-read' list for forever now.  I figured since the movie was coming out soon...it was mandatory reading material.

I love an easy read.  I'm just afraid this book will be too easily comparable to London and I. {Wink!}





I love me some True Crime reading. And I vividly remember following this story in the news a few years back.

Summertime PIG PICKIN Cake.


The other night we headed over to our friends' house for a little bbq/swim party.  {Have I mentioned that even though it's hotter than HOT right now....I DO love summer?!}

I brought dessert and decided to make an old family favorite. 

This cake is the PERFECT dessert for summertime.
It's refreshing and moist.

{And listen....I loathe the word moist but it's the perfect word to describe it.  Now excuse me while I dry heave. 😂}

Anyways - - it's super easy to whip up and super yummy.
I promise - - you'll love it!

Summertime Pig Pickin Cake

1 package yellow cake mix
4 eggs
1/2 cup oil
1 can {the bigger size} mandarin oranes {don't drain}

Mix the above ingredients together and bake in a greased and floured 9 x 13 pan {or 2 round cake pans}.

Topping:

1 large can of curshed pineapple {not drained}
1 package of vanilla instant pudding
1 large container of Cool Whip

Mix together and spread over cooled cake. 
Refrigerate until chilled and serve with a scoop of vanilla ice-cream!

I'll admit....
I was a little reluctant to buy this cereal because it's a little pricier than I normally like to spend on my cereal 
but.......
It is hands down WORTH IT!!!!

If you like Cracklin Oat Bran - - - 
You will LOVE this!
{It's even better actually because I don't feel like it rips up the top of my mouth}.

No joke I bought this one night and by the next morning it was gone. My kids LOVE it too!

I like to throw in a few with my yogurt, too.
Adds a little crunch. 
Makes for a yummy snack!

How did I just recently discover their Chick-Fila sauce???

Sunshine Jello Salad.



Coming back from vacation stinks!
I feel like it always takes me a good few days to get back into the swing of things.  Who's with me?

As promised...I'm sharing this DELICIOUS recipe from our friend Claudine.  I've been dreaming of it ever since we had it up at the cabin.

It'll make the PERFECT side for all of your summer get together - promise!

SUNSHINE JELLO SALAD

Make 1 large package of cook and serve lemon pudding as directed on the box. Mix 1 small package of orange jello with 1 cup of boiling water and then stir it into the lemon pudding. Put in a smaller 9x13 pan and let sit until firm.

Topping is 1 small pacakge of instant lemon pudding made with 2 cups of milk and then mix it with 2 cups of Cool Whip. Garnish the top with mandarin oranges!

Some BERRY good RECIPES.

I liked Strawberry Shortcake A LOT when I was little.


In fact, my mom saved my original Strawberry Shortcake doll that I used to play with when I was a little girl and THE DOLL STILL SMELLS LIKE STRAWBERRIES! 

How AMAZING, right?!
They just don't make toys like they used to.

This is what I blame my 
ALL THINGS STRAWBERRY FLAVORED 
obsession on.

{I did LOVE her pal BLUEBERRY MUFFIN too and coincidentally, I love all things BLUEBERRY as well!}

I realize I've posted quite a few YUMMY strawberry-ish recipes lately and wanted to compile them all in one post so you can ENJOY them ALL summer long!

Recipe from Heather Ross.
Blend 1 can frozen limeade, 1/2 can of Sprite, 2 cups frozen strawberries and the pulp of 2 limes.


Bake a boxed vanilla or yellow cake mix according to pacakge.
Once the cake has cooled, bring 1 cup of water to a boil and then pour into 1 pacakge of dry Jell-O strawberry mix.  Stir until well dissolved and then add 1/2 cup of cold water.
Poke holes all over your cake with the bottom of a wooden spoon.
Pour Jell-O all over cake.
It will seep into the prepared cake.
Refrigerate and right before serving, frost with a carton of COOL WHIP.
Garnish with fresh strawberries or blueberries.

Bacon Pasta Salad Recipe.


BBQ season is upon us and chances are, you're going to need a yummy side to bring to at least one of those BBQs this spring/summer.

Look no further.

This just recently became a family favorite.


It's easy, delicious and you can make it up the day before if needed!

Bacon Pasta Salad
{Adapted slightly from Life in the Lofthouse}

1 package tri-color rotinia pasta
1/2 cup mayo
1/2 cup sour cream
1 package dry ranch dressing mix
1 tsp garlic powder
1/2 cup milk
8 slices of bacon, cooked and chopped
1 large tomato, chopped
1 cucumber, chopped
1 can of black beans, rinsed
1 cup shredded cheddar cheese
Salt & Pepper to taste

Boil noodles for about 8 minutes. Rinse and set aside.

In a small bowl whisk together the mayo, sour cream, ranch, garlic powder and milk.

In a large bowl add the pasta, tomato, cucumber, black beans and shredded cheese.  Toss with dressing. Salt, pepper and season to taste. Chill before serving.
